flashing coolant light, levals good ,what gives ??

Could be a faulty coolant level sensor, or....
I had this problem about a year ago and replacing the level sensor didn't cure it.  
I tried to remove the relay for this, thinking it could be a bad relay.  Try as I might, I could NOT get the stinkin' relay out! "Oh, well, I'll live with the flashing light" I thought.  The light never flashed again.
Try wiggling the relay.
