The red line.  No really, something just under 150 C I
believe.  I personally start getting a little ancy when it
tops 130, but I've only seen this once or twice in my own
car.

Yes, it will kick on high if you're running a/c.

I suggest a lower temp fan switch and perhaps thermostat to
keep the under-hood temps in check.
