Sometimes the coolant level sensor "prongs" get slimy and can't properly
detect the level. Pull the plug on the sensor, remove (engine cool only!)
and rinse and wipe the sensor with a clean rag. While it's out, test the
circuit by bridging the sensor plug. Your light should not come on. If the
problem persists, your sensor is probably bad.
