hi temp idiot light

My 87 16v isn't running hot, yet I have noticed that
the red warning light likes to flash, even when the
car has just started up. The needle indicates normal
operational temp. after the car has warmed up from a
cold start. The coolant level is good. I've never seen
this happen before save when the instruments were
hooked up wrong by the Volkswagen dealership. Many
times I can shut the car down, start it up and the
light stops flashing. Bad or corroded connections
maybe? Any other ideas?
