Playing with the head (8v)

Wow!  Isn't playing with the scirocco fun!

I just took off the head off my little 8v because the head gasket was a
leaking... after taking it off, was I ever surprised!  The valves had all
this light brown crap (carbon deposits?) and where very worn!  Needless to
say, I had the local machine shop redo all the valves, lifters (solid) and
a few other seals... after getting it back... wow does it ever look clean!
It looks like aluminum again and its shinny!!  I can't believe it... this
is my first time doing the difficult of a job... took me quite a while to
take it off... but I loved every second of it!  so anyways I have a few
little question for the 'rocco maniacs before I put it back together!

I took off the warm air hose... is there any need to re-attach it?  It
seems kinda pointless since my airbox has a many of whole is it anyways
(cheese whiz style!)...  if I do take it off, where should i hang it? 

I'm thinking the reason I have so much crap deposits is because of a wrong
air/fuel mixture... i'm I right?  The engine did have 212000km on it, but
it still looked like excessive wear... I looked up in bentley, but
couldn't find it... could anyone give me a page number or a clue what
section fixed the mixture might be in?

Any other good hints would be muchly appreciated!

Just have to say this group is definetly a wealth of pricessless
(needless, useless?) infomation!  I usually just sit back and watch, but
I've learned so much more about my car in the last 3 months than I have in
my whole life!  Thanks guys and gals!
