Springs go BONG!

I recently installed some height adjustable shocks in my '82 Scirocco. 
The car isn't slammed or raked...

The problem is:
Whenever I turn the wheel extreme left or right (like in making a
U-turn), I hear this "BONG!" come from the front springs and a definite
tendency for the car to veer in that direction once going forward again.
What the hell is causing that?  Are the springs binding or something? 
It's pretty irritating...
