Overheating ?

My block usually runs at 100 oC  (212oF) (digital oil temp)  and 
highway at 110 (230 o F?)  am I overheating?  The water gauge 
indicates half (where the DEL is, sometimes a little over it)

I have a diesel Radiator though.  If I am overheating, could I just 
remove the thermostat causing way more coolant to go in?
