I suggest drilling a small (1/8th inch) hole in the thermostat before
installation. Most thermostats have a bleeder hole with a jiggler pin,
but the vw ones don't for some reason. The hole will allow the trapped
air below the thermostat to escape, ensuring the thermostat is
completely surrounded in water.
My other suggestion for your overheating problem is do a compression
check to check for a blown head gasket. You don't necessarily need to
have oil in the water, water in the oil, etc... in fact the problem
I'm guessing you have is exhaust in the water. When the car is running,
can you smell exhaust coming out of the overflow tank?
