Welding, How did people learn?
I had a mentor back when I was 20 years old that taught me a lot about cars in general including welding.
He taught me the basics and it was pretty much just practice and reading books after that. Did that for 20 years then bought a TIG welder and have only used oxy-acetylene for cutting since then. Figured the basics were close enough between gas and TIG that I could teach myself. Well, I was right, but it took a lot more effort than I would have ever thought.
Bear in mind that oxy-acetylene can only weld mild steel plus braze and solder. MIG and TIG can weld mild steel, stainless steel and aluminum plus perhaps a few other more exotic materials such as titanium or inconel.
So, you might want to consider different classes if you have a particular application in mind beyond gas welding's capabilities.
I never took a class and I'm an old dog beyond learning any new tricks, but I think it's a great idea to start out learning.
