Acid Bath
Well, just taking a car all the way apart and reassembling it is a hell of a lot of work.
If you pay somebody to do it'll cost more than the car is worth.
If you were to do that, just make sure you label everything and package the hardware with the parts it held on. Keeping things organized goes a long way towards helping reassembly. Sorting through a bunch of hardware in a box is NOT the way to do it.
I'm dubious about acid dipping though. How do they rinse off the acid? If any is left behind you'll have a corrosion problem, if any rinse water is left behind you'll have a corrosion problem.
Personally, I'd media blast it. Sand blasting is not appropriate for the light sheet metal of a car body, it will warp and distort it. It needs to be either glass bead blasted or walnut shell blasted at an appropriately low pressure to avoid warpage. Make sure you find somebody that's experienced should you decide this route.

Subject: Acid Bath
Hello folks I just bought a 1980 S again after not owning a rocco for
13! Years. But, as is the case for most VWs this age it has rust all
over the frickin place. What I would really love to do is take the
whole thing apart and give the body an acid bath, does anyone know how
much something like that costs? Is it a ton of work?
Thanks
-Bill
