tire size and other wheel questions

This weekend at Dubs Along the Rockies I bought a set of brand new 16x7.5 rims that I think are pretty sick. I know, 16" isn't exactly an ideal size and I'm just hoping I don't have to take out a loan for tires, but they were sweet and cheap.....
 
Anyways, what width tire do I want? I hate the stretched look. I assume I'll need about a 40 height to fit decently. I'm planning on rolling the fender lips. Will I have to stay pretty much at stock ride height? Tell me how you'd set this up. As for tires, if you have recommendations, here's what I'm looking for. Good wear qualities, decent grip, good looks, really good price. I don't race, don't experience much rain and don't typically 'get sideways' on entrance ramps like some people I know, so I don't need some kickass auto-x tire.
