Cooling Questions, Oil temp rising

Hi all

It's been a while since my last post
my rocco spend 3 months on my garage standing on hold
now i'm back on my rocco again with new  mounts, shocks, shifter linkage,cv-joints,moufler and master cylinder

Now I have a couple of questions 

Yesterday i was driving my rocco and the oil temp started to rise till 120 c
check oil level ok, coolant level ok
but i dont want to take risks .. so i change the oil this morning
is this a symptom of something  bigger?
any ideas what to check/ replace?

Another Q : Is it convenient to remove the thermostat over the summer?


btw , it's been a very hot summer down here in the juarez/el paso tx area
