Well, 1st get rid of the Carbs and stick with the FI.
OK, we got that out of the way.

A good running car, is a good running car. If the FI
isn't running right, right now, you might want to find
out why. (Covered that base too.)

The real purveyors of weber magic are the air cooled
motor dudes; Beetle, K. Ghia, buses, etc. They have
spent a lot of time refining the dual carb setup you
mention and can prob. drop an answer at the tip of a
hat. 

There ARE some guys who have installed a gang of four
carbs, one for each cylinder, (w/ those cute little
trumpets too 8])  ), so it's not a fantastic idea
after all.

My 1st thought is the FI fuel pump, which is normally
meant to circulate fuel around, and under very high
pressure, should be replaced for one that sips in
comparison. 

If you really want to be cool, you'll slap a
supercharger on the top that needs a hole in the hood
to stick out of.
