Coolent system parts Q's

I'm getting ready to overhaul a few different things in my rocco but I'm
startig with the coolent system first. Now I've heard a lot of folks
here on the list talk about the low temp t-stat and fan switch. At the
potters site I see a normal 180 t-stat and then there is one that says
87 degree. I'm guessing I want the 87 degree and the low temp fan
switch.
What I'm wanting to make sure of is that this won't cause the car any
problems come winter. I live in North Georgia and it's not uncommon to
have 20 degree temps on the morning drives to work durring the worst
part of winter. So, how should I go about this. I just don't want to
freeze my ass off in the mornings if I don't have to.
