The coolant light may flash for a seconds after starting the car; if it 
stops, that is normal.  If not, and the temperature is under the top line 
on the gauge, it is blinking because the level of coolant is too low.  If 
the coolant level is OK, the switch in the coolant tank may be bad, or the 
contacts dirty or broken.

As far as your oil is concerned -- was the engine TURNED OFF and the car on 
level ground?  If the engine is running, you will get oil splattered 
halfway up the dipstick -- that is normal.  Turn the engine off, wait 15 
minutes for the oil to settle back into the pan, make sure the car is on 
level ground..  Take the dipstick out, wipe it dry, insert and then remove 
to check oil.
