PowerQuest DriveImage is even easier than Norton Ghost, in my opinion, and it seems more stable and simple in design.
I've done exactly what you're describing - set up a fresh install of XP, changed all my settings to my likings, added drivers (don't do this if you plan on upgrading hardware any time soon), then made an image (requires a few blank CDs). When you want to restore to freshness, just make sure DriveImage is still installed and pick Restore Image from its menu - it'll guide you.
