Is it me or am I crazy??????

The only rubbing I have had is with a bunch of junk in the back or a 
passenger and some junk in the back.
This is with et25 14X7 with 195/55/141 Dunlop SP8K's.
Or et30 15X7 with 215/45/15 Toyo Proxes T1-S.
It will all depend on what offset you use, what size tire, what brand (the 
edge of some tires are more square than others), how low your car is, what 
type or condition of shocks/springs (and other suspension components as 
Joshua pointed out). There are a lot of variables.

So based on my experience you might be safe up to about et25 with 14X7 and 
195/55/14's (you are talking about 14" wheels right).
This is assuming you have a good (new bushings, etc.) suspension, with 
sport shocks/springs and nothing is bent or worn out.

If you have 14X6's you can still run this size but a 185/60/14 will 
probably fit the rim better giving a better contact patch and better 
performance with less drag.

I have had 205/55/14's on et25 14X7's with Yoko AVS Interm. and they did 
rub in back and were too tall anyways.
