You can use the 8v radiator and fan setup with a special hose (easy to
find).  We just did a 2.0L 16v conversion in my friend's Rabbit PU and used
the stock rad and fan with the stock switch too!!  I think the big radiator
was mostly for the A/C.  HTH!!
