A bit of a sweeping generalisation... it's all a question of tradeoffs.
Low octane = faster burn = greater risk of knock/burnt valves/etc.
Every engine is different and they behave differently according to ambient
conditions. So you go for the safe option which suits most people most of
the time, i.e. tending towards the higher end octane. This is especially
true for older cars which have relatively unsophisticated fuel/ignition
management. The other side of the coin is that the slower the burn, the
greater the likelihood of unburnt/ partially burnt fuel going out the
exhaust. So you trade-off between safety (higher octane) and efficiency
(lower octane) and this trade-off will suit some cars better than others.
