Laurie,

Your idea is very simple to wire up!  Just wire the dash switch so that it 
is in parallel with the thermo switch.  When you flip the dash switch, the 
thermo switch will be bypassed and the fan will run constantly.  When the 
dash switch is open, voltage still goes through the thermo switch when the 
temperature gets high enough.  Connect each side of the dash to each side of 
the thermo switch and you're good to go!
