What tires will fit on a 16v w/ race springs?

I have some new rims coming for my car and I need new tires.  I'm getting 
some 15 x 6.5 w/ a 35mm offset rims.  They are going onto a 16v Scirocco w/ 
race springs/Bilstein sports so the car sits pretty low.  I'm wondering if 
anyone else has this setup and do you rub w/ 205 tires?  I don't want to go 
through the hassle of cutting my inside splash guards to get tires to fit.
