Two speed fans hook up to:

1. The Thermo switch &
2. The A/C system.

When you turn on the A/C the fan either comes on (if off) or kicks up to
a higher speed. Double windings in the motor are used to accomplish
this.

If you don't have A/C you can hook up a manual switch (needs to be rated
for enough amps) for use in adverse conditions. :)

This is without looking at a Mk2 Bentley but I think it's right.
