Sorry to hear the bad news, Gary.  Well the obvious choice is another
Scirocco.  Aren't the 8Vs in the $1500 range?  Granted it won't be the
sweetest ride (because it's cheap, not because it's an 8V.  no flames
please), but it is your transitional/beater car.  Besides, it could be a
helpful road map or potential donor as you work on your baby.

If that's to expensive for you.  Check out the first generation RX-7.  I had
one of these.  Tons of fun to drive, good power and speed, durable as hell
and lots of donors at Pick-a-Part.  The downfall is getting it serviced.  If
you can't do the work yourself (the rotary engine works more similarly to a
two stroke engine than a four stroke), it could be expensive.
