sudden overheating probs

Hello All,

having just removed my AC system and replaced my
water pump two weeks ago, I am just now experiencing
overheating problems.  I also just replaced the thermostat
(Chief's special), and the fan switch is 180 deg.
I do have mostly plain ole water in it right now, because
I ran out of coolant.
The water temp will skyrocket in the first 10 minutes and then
so will the oil temp.  Then, sometimes the temp will drop
down suddenly to below half.

Suggestions?
Ideas?
