EC had an article on a kit for dropping a Ford 302 V8 into a Volvo. If I
had an old Volvo that needed a new engine, I'd probably do it. And then
theres the company that does the Chevy V8 conversions for all Porsches,
that'd be a sweet car. I've heard of people dropping Porsche 911 engines
into VW vans, and bugs as well. There was also a Datsun 510 that I used to
see around Tech campus all the time that had an aluminum(block I think)
Buick V6 in it. 
I think in a Scirocco, if you went to a larger motor configuration, you'd
have to be very careful, otherwise you'd wind up with a car that was
noseheavy. Besides with the 2.0 16V, G60 and VR6 engines available, they
seem like they'd be about the best swap candidates if your looking to
directly drop in a high hp motor, without building one up. Plus with these
choices, its all been done before. So you should be able to find the people
that know what parts you need, and have fabricated the parts that need to
be fabricated.
