Besides what's already been suggested, another reason could be the
brushes in your alternator. Take them out (that takes about 10 seconds)
and look for uneven wear, or too much wear.
If along with your v-meter reading fluctuations you can also detect
fluctuations in your interior lighting, then the problem is certainly not
the v-meter.
