Yeah, Plus 1 would be 205/50/15 or 195/50/15.  Your Plus 2 would be 205/40/16 or 215/40/16.  You want to stay as close as you can to your stock height.  Figure out your stock height on your 185/60/14.  Here's how to do this:

        The 60 means your sidewall is 60% of your width in width in mm which is the                 185.  So 185 times 60% is 111.  Double that because of course there's 2 sidewalls in the height and you get 222.  Being that there's 25.4 mm in an inch you add 355.6 (25.4 times 14) for your rim height.  Add 355.6 and 222 you get 577.6 for a total tire and rim height.  
         So 195/50/15 which has a height of 576 is pretty damn close.  205 will fit, too, tho, but you really can't tell the difference between 195 and 205 especially if you go with a 15 x 7 rim as opposed to a 15 x 6 rim. 15x7 looks much better too. Also I think the price difference between 195 and 205 tires is too much to be worth it. 

But for the 16s, the 215/40/16 having a height of  578.4 is good.  If you went with the 205/40/16 you'd have a 570.4 height, which would give you a little more cushion for lowering, but your speedometer might get thrown off a bit since the diameter is less.  I could be wrong on that, tho.  It all depends how the speedometer works.  

Take a look at a Tire Rack ad which I'm sure you've seen before.  They have real good package deals.

Another thing about rims to look for is the ET.  This is the offset.  I'm not sure how it works, but the smaller the number, the more the rim will 'stick out'.  You want to go stock or maybe couple numbers lower.  I think stock for a 'Rocco is 38.  35 should work and also give you a wheelwell filling look, which is definitely what you want.  Tire Rack can give you professional advice on that. .
